High quality espresso is not a set it and forget it affair! We continuously monitor our shots adjusting grind, dose, water temperature and volume as enviromental factors like humidity and ambient heat change, as the the beans rest day to day, and for each specific blend and SO (single origin) offered. We constantly strive for the highest shot quality. And if the shots not right, we dump it.
